QUESTION
Are there any differences between Asian basils and European
basils, especially basilicum?
ANSWER
Generally speaking, the flavours of Asian basil differ from
those of European basils because of the different chemical
constituents of the essential oils. The dominant aroma constituent
of sweet basil is floral with some anise and clove, shereas
in Asian basils anise is dominant with some clove and little
camphor. If you can not obtain Asian basil when cooking an
oriental dish, any European variety can be used instead, but
the flavour will not be the same, and you should use a little
more than the amount recommended.
